It'd be tough to pin down Bowie's sound with just an album or two. I hate to say it, but if you're relatively new to Bowie your best bet might be one of the many best-of collections. Just don't let it satisfy you- he's got 40 years of great music to explore (though some is better than others). Find a song you like, match an album to the song, and enjoy. Repeat as needed.
Otherwise, I agree that Hunky Dory would be a good start. Also consider Scary Monsters.
Hunky Dory was the first Bowie album I ever heard in 1972.
It came out the previous year but only came to the fore after Ziggy Stardust made Bowie famous that year and what an album it was and still is.
I would therefore recommend Hunky Dory for you to start zom and if it has the same impact on you as it did me then maybe in 35 years time you will have every Bowie album in your collection too.
I started out with 'Low', but I seem to have a knack of picking up the most challenging albums first. Not to say that 'Low' isn't a brilliant album (it might even be my favourite Bowie album) but it's certainly odd XD.
I did start on 'Best of Bowie' though so I suppose it wasn't as if I was thrown into the deep end. I'm the sort of person who avoids best of albums like the plague generally, preferring the 'flow' of an album, but for a career as extended and indeed as eclectic as Bowie's I think something like that is a good place to start. Failing that my bet would be on Ziggy, just because I'm jaded, hah.
I wouldn't also rule out his last two albums, either; 'Reality' in particular I think is a very strong album!
The first Bowie album that I heard was Space Oddity, which is quite different than anything he's done later (it's mostly acoustic, folky stuff), but I think it's very good. Ziggy Stardust is the natural choice for his glam-rock era and I think that most casual listeners consider it his best album. Let's Dance is nice if you like his '80s dance-pop stuff. Low is good if you want to hear his gloomy, more experimental side. And if you want to hear what he sounds like lately, I think that Heathen is one of the best albums of this decade, so far, so it would also be a good choice.
Bowie was THE SHIT, now it's simply shit...but for the sake of long afternoons listening to him I have fo affirm the motion Ziggy and Hunky Dory...are greatness...

Hunky Dory or Ziggy Stardust, even if his best effort is Station to Station for me
